Marinated Cucumber Salad

This is my Ukrop's (now Martins...) knock off marinated cucumber salad. It's always been one of my favorites. Try it! I think you'll like it :)

Get the recipe for Marinated Cucumber Salad:

2 cucumbers, cut in 1/4 inch slices
1/2 a small red onion, thinly sliced
1/2 cup white vinegar
1/2 cup sugar
2 tablespoons water
1 tablespoon lemon juice, freshly squeezed
1 tablespoon canola oil
1/8 teaspoon black pepper

1. Put your sliced cucumbers and onion in a bowl, mix them and set them aside.

2. Add the remaining ingredients to a small saucepan. Heat it on high and stir until the sugar and salt dissolve.

3. Let the marinade cool slightly, about 10 minutes, then pour it over the cucumbers and onions.

4. Refrigerate it overnight. The vegetables will soften and reduce in volume.
