How to make vegan Paczki?

or some of you may be wandering, what is a Paczki? Well, Paczki (which sounds nothing like what it appears, poonch-ke) is are light, delectable pieces of art filled with creams or preserves and topped with powdered sugar or icing. They are most like a jelly-filled yeast doughnut. It is a polish tradition to eat Paczki on Fat Tuesday or Fat Thurday to clear to house of lard, sugar, and everything else great (probably not vegan) before the start of lent. Catholic Polish towns in America like Hamtramck, Michigan have huge festivals for Pacski Day. So, let the Paczki party begin!

Ingredients:

1 can coconut milk
1/3 cup raw sugar
1 package of dry active yeast
1/2 teaspoon salt
1 teaspoon vanilla extract
1/4 teaspoon nutmeg
2 3/4 to 3 cups all purpose flour
1 tablespoon of oil + enough for frying (so a lot)
1/2 cup fruit preserves
12 cup powdered sugar

Directions/Method:

In a large mixing bowl, stir together coconut milk, raw sugar, yeast, salt, vanilla extract, and nutmeg.

Mix in the flour with spoon or hands to form a slightly damp, but workable dough.

Knead the dough on a lightly floured surface, until it is uniform and consistent throughout.

Place the dough in a clean and light oiled bowl and cover with kitchen towel.

Be patient and allow the dough to double in size, about 2 hours.

Place the dough on a floured surface and roll out to about 1/2 inch thick. Cut into rounds using a biscuit cutter or something like it (cookie cutter, ramekin).

Place the Paczki donuts on parchment paper and cover with let raise for another hour.

Heat vegetable oil in a deep fryer or in a dutch oven to 350 degrees.

Fry for 1-3 minutes per side, you know it is time to turn when you see a rich brown color form on the edge.

Allow to cool and drain on paper towel before filling with your choice of fruit or cream, using a pastry bag and piping tip.

Roll paczki doughnuts around in powdered or granulated sugar. Enjoy!
